The Red Seal Cook exam has 150 multiple-choice questions, a 4-hour time limit, and a 70% pass mark. The Cook exam is unusually broad — 13 major work activities, none dominant. Meats/poultry/game (about 11%) and fish and seafood (about 10%) lead, with sauces, hygiene/sanitation/safety, produce, and stocks/soups each near 8-9%. Because the marks are spread so evenly, weak spots in any single area (classical sauces, food-safety/HACCP, costing and menu planning) can quietly cost a pass.

Red Seal certified Cooks in Canada earn a median wage of approximately $21.50/hr. Hourly pay typically progresses from about $15.00/hr for first-year apprentices to $25.00/hr or more for lead-hand and foreman roles: Apprentice Year 1 — $15.00/hr; Apprentice Year 3 — $16.50/hr; Journeyperson (uncertified) — $18.00/hr; Red Seal Journeyperson — $21.50/hr; Lead hand or foreman — $25.00/hr.
